Disney Magic and Kids: Epcot International Flower and Garden Festival

The Epcot International Flower and Garden Festival is going on now through May 20, 2012.  Last year after attending the Flower and Garden Festival, my son and I were inspired to begin our own garden.  We planted a variety of vegetables such as corn, tomatoes, watermelons, squash, zucchini and many varieties of herbs. It was a great experience for my son to visit the garden daily to see how much the plants had grown.  He loved to water the garden, while hunting for vegetables ready to pick.

While visiting the Flower and Garden show last year at EPCOT, I was sure to get a few recipes for the garden items I was hoping to grow once back at home. While the garden was only somewhat successful, we were able to try out a few recipes.

Here was one of our favorites:

Fresh Basil Pesto
Prep time: 10 minutes

Ingredients
2 cups fresh basil leaves, packed
1/2 cup freshly grated Parmesan-Reggiano or Romano cheese
1/2 cup extra virgin olive oil
1/3 cup pine nuts or walnuts
3 medium sized garlic cloves, minced
Salt and freshly ground black pepper to taste

Place all ingredients into a food processor and pulse. (I am sure the prep time is accurate if you had a food processor instead of a 2 cup chopper!)
