One of the savory appetizers you can feast on at Narcoossee's at Disney's Grand Floridian Resort and Spa is the crab cakes with grilled corn relish and ancho chili sauce.
|Crispy Crab Cakes|
3 pounds regular lump crab meat
2/3 cup mayonnaise
4 tablespoons pasteurized egg yolks
4 tablespoons Dijon mustard
2 tablespoons pasteurized lemon juice
1/2 tablespoon Worcestershire sauce
1/2 tablespoon parsley, finely chopped
1 cup cold water
1/2 teaspoon cayenne pepper
1/2 teaspoon black pepper
2 tablespoons salt
1 tablespoon Old Bay seasoning
1 tablespoon chives
10 ounces sourdough bread crumbs, crust removed
- Combine all ingredients in bowl except for the cold water and lump crab meat.
- Add the cold water to loosen the mixture.
- Fold in the lump crab meat and form into 2 ounce patties.
- Pan fry patties in a small amount of oil and finish in the oven at 350 degrees for 5 minutes.
