If you've ever been to the Tusker House at Disney's Animal Kingdom you'll know that the menu is very similar to that of Boma - Flavors of Africa. For good reason, the menu was created by the same chefs.
One side dish that is a staple in African, as well as Mediterranean, Middle Eastern and Moroccan restaurants is couscous. It is traditional served with meat or vegetable stew.
2 cups vegetable stock
5 each fresh basil leaves
8 ounces Israeli couscous (approximately 1¼ cup)
¼ cup butter blend
1 teaspoon fresh rosemary
1 teaspoon fresh thyme
½ teaspoon salt
¼ teaspoon ground black pepper
- Bring vegetable stock to boil.
- Add fresh basil and simmer.
- Add Israeli couscous and cook until liquid is absorbed.
- Season with rosemary, thyme, salt and pepper. Adjust to taste.
