Recipe: Barbecue Pork Sandwich

For a summer picnic there is one item you must have, barbecue pork sandwiches. Kona Cafe at Disney's Polynesian Resort serves one with a twist on the classic barbecue sauce by adding mangoes to smokey barbecue sauce.

Kona Cafe
6 oz pulled pork
3 oz smokey mango barbecue sauce
1 each burger buns
½ oz shaved red onion

Smokey Mango Barbecue Sauce
4 oz mango slices, in syrup
16 oz ketchup
¼ oz liquid smoke flavoring
2 oz onion
1/8 oz cinnamon
¼ oz cumin
¼ oz garlic
8 oz water
2 oz sweet chili paste
  1. Sauté onion with cumin, garlic and cinnamon.
  2. Add remaining ingredients and cook until boiling.
  3. Puree well and serve hot.
  4. On each bun place 1 oz of pulled pork, top with barbecue sauce and red onion.
