The Wave at Disney's Contemporary Resort focuses on organic foods, and is one of the few restaurants at Walt Disney World that offers this.

5 oz baby arugula
8 oz fet cheese, crumbled
20 pitted kalamata olives
1/3 cup candied pecans
2 tbsp white balsamic vinegar
1/2 cup extra-virgin olive oil
8 wedges seedles watermelon, 4 inch
6 tsp aged balsamic vinegar
- Combine arugula, feta cheese, olives and candied pecans in a large bowl.
- Whisk together white balsamic vinegar and oil in a medium bowl. Add half of the vinagrette to arugula mixture. Gently toss, slowly adding more vinagretter until mixture is coated.
- Place 2 wedges of watermelon on each plate and drizzel with aged balsamic vinegar.
- Evenly distribute arugula mixture over watermelon wedges and serve.
