4 cups gourmet salad mix
4 tbsp dried cranberries
2 tbsp dried blueberries
1/2 diced red apple
2 tbsp chopped walnuts
1 cup Poppyseed Dressing
Poppyseed Dressing
1/2 cup sugar
1/2 cup lemon juice
2 tsp diced onions
1 tsp dijon mustard
1/2 tsp kosher salt
3/4 cup canola oil
1 tbsp poppyseed
- Make poppyseed dressing. In a food processor place sugar, lemon juice, onions, mustard and salt.
- Slowly add in canola oil.
- Add poppyseed and blend for about 10 seconds.
- Place all salad ingredients in a large bowl and toss lightly until salad mix is well coated with dressing.
- Serve.
