Recipe: Saratoga Springs House Salad

If you are looking for a fresh, fruity, slightly sweet salad, try the Saratoga Springs House Salad from Artist's Palette at Saratoga Springs Spa & Resort.

This salad can easily be turned into a low-carb choice by making it with Splenda instead of sugar. Perfect for those that are in the second stage of the Atkin's or South Beach Diet.

The Artist's Palette
Recipe
4 cups gourmet salad mix
4 tbsp dried cranberries
2 tbsp dried blueberries
1/2 diced red apple
2 tbsp chopped walnuts
1 cup Poppyseed Dressing

Poppyseed Dressing
1/2 cup sugar
1/2 cup lemon juice
2 tsp diced onions
1 tsp dijon mustard
1/2 tsp kosher salt
3/4 cup canola oil
1 tbsp poppyseed
  1. Make poppyseed dressing. In a food processor place sugar, lemon juice, onions, mustard and salt.
  2. Slowly add in canola oil.
  3. Add poppyseed and blend for about 10 seconds.
  4. Place all salad ingredients in a large bowl and toss lightly until salad mix is well coated with dressing.
  5. Serve.
