One of my favorite vegetarian dishes are mushroom because they have a rich meatiness to them. They are filling and hearty. This recipe comes from Yachtsman Steakhouse at Disney's Yacht Club.
1/2 oz Garlic, minced
1/2 oz Shallot, minced
2 oz Shiitake mushroom, sliced
2 oz Portobella mushrooms, sliced
2 oz Cremini mushrooms, quartered
1/2 oz Olive oil
1 oz White wine
2 oz Heavy Cream
3 oz Goat cheese
1 serving Spinach pasta, fresh, blanched
1/2 oz Diced Tomato
1/4 oz Chives, minced
- Blanch pasta sheet and set aside.
- Heat pan and add olive oil, garlic, shallots, mushrooms and sauté. Deglaze with white wine and finish with goat cheese.
- Place in pasta bowl.
- Sprinkle with tomato and chives. Serve.
