My Culinary Year Long Challenge - The Basics

As I mentioned last week I've decided to take on a year long challenge of advancing my culinary skills. I enrolled in the Top Chef University, an online cooking school. So far I've accomplished the first section "The Basics", which covers organizing your kitchen, stocking your pantry and refridgerator/freezer, knive skills, pots and pans, kitchen tools, kitchen equipment and different vegetables, fruits, herbs and spices. 

I'm a very organized person and I get organized with all of my ingredients and equipment before I start so I already had that down. Also, I have incredibly tall shelves in my kitchen and need a step ladder to reach the top two so you can imagine that I'm quit stocked with kithchen gadgets and neccessary foods and spices for my kitchen. I don't know whether it's a good thing or a bad thing but I have all the basic items exept for one - a Dutch oven. I don't have one of those yet. Surprisingly with all of the things that I had that I don't really need to have. For the most part I'd say that I knew pretty much everything in the Basics part of the program. It was really a refresher course.
