What to look for when buying Seafood

Here is some helpful information when shopping for seafood so that you can pick the best.

When shopping for fresh, whole fish it should have clear bright eyes, bright red gills, scales tight to the skin and it should be firm.

Live crabs and lobster should have hard shells (except for soft-shell crabs), they should feel as heavy as the look and lobsters should tuck their tails when you lift them.

Shrimp should have translucents shells with no black spots, they should be uniform in color and size, be moist and firm.

Clams, oysters, mussels and scallops should have their shells tightly closed (if they are open they should should close when you tap on them), the shells should be intact and moist. If you are shucking them the meat should be plump, free of shell pieces and their liquid should be clear.

Fresh fillets and steaks should be moist, firm with a bright, consistent color. They should have clean cut edges and be evenly trimmed.
