Recipe: Mango and Black Bean Salsa

Mango and Black Bean Salsa

1 ripe mango, peeled and diced
1 large tomato, diced
1/2 medium onion, finely chopped
1 jalapeno, minced (may substitue with a hotter pepper if you'd like)
1 can black beans, drained
1 can corn, drained
3 tbsp fresh cilantro, chopped
1 lime, juiced
Salt, to taste

Combine mango, tomato, onion, jalapeno, beans and corn in a bowl and mix together. Add in lime, cilantro and salt. Mix again. Serve with corn tortilla chips.

  1. Love this recipe and love mango salsa! The only thing I have an issue with is the mango. For whatever reason, I can never cut it easily and it ends up a mess. Any videos about cutting a mango? :-)
