Recipe: Toasted Pumpkin Seeds

One of my favorite foods to make at Halloween is pumpkin seeds. Every year I carve a pumpkin and then save the seeds to make Toasted Pumpkin Seeds. There are several different recipes for this but this is how I make mine. 

Pumpkin seeds
2 tsp. melted butter 
2 c. water
1 tbs. salt

Optional seasonings:
Garlic powder or salt
Cayenne, Ancho, Chili or any other pepper
Cajun seasoning
Cinnamon and/or Nutmeg

  1. Preheat oven to 300F. 
  2. Clean off major chunks of pumpkin.
  3. Combine water and salt in bowl. Place pumpkin seeds in and let soak over night.
  4. Drain pumpkin seeds and toss in melted butter. If wanting to add extra flavor do so now.
  5. Spread pumpkin seeds on a baking sheet in a single layer and bake for about 45 minutes or until golden brown.
Cook's Notes: The reason that I soak the pumpkin seeds in salt water the night before is so that the seeds absorb the salt flavor. That way they have a salty flavor without being overly salty. If you want them to me more salty just add salt again after tossing in the melted butter.
